Deliciously seasoned with moist chicken, these are a real crowd please, ideal for when you’re entertaining people for dinner.
Preheat the oven to 200°C/fan 180°C/gas mark 6.
Mix together the oil, spices and salt in a medium bowl. Cut the chicken thighs into strips, add to the bowl and stir to coat. Leave to marinate in the fridge for 30 minutes.
Place the chicken strips on a baking tray and cook in the oven for 20 minutes, until cooked through and golden, turn pieces over after 10 minutes.
Meanwhile, finely shred the cabbage and add to a bowl along with the grated carrots, add the mayonnaise and lime juice, stir to combine and season with salt and freshly ground pepper.
Warm the tortilla wraps according to pack instructions, fill each wrap with a little shredded lettuce, the red cabbage coleslaw, some strips of chicken and finally a generous topping of Pure Grated Cheese, serve immediately.
Alternatively serve all the components in dishes, bring to the table and let people build their own tacos.
