Smoked Mackerel Poached Egg and Hollandaise

This meal will become a quick and delicious family dish.

 2 tbsp PURE SUNFLOWER SPREAD
 4 SMOKED MACKEREL FILLETS (175G EACH)
 1 tbsp CHOPPED FRESH PARSLEY
HOLLANDAISE SAUCE:
 115 g PURE SUNFLOWER
 2 EGG/EGG REPLACER YOLKS
 12 tbsp LEMON JUICE
SERVE:
 4 POACHED EGGS
 SALT & GROUND WHITE PEPPER TO SEASON

Hollandaise:

Melt the Pure spread in a pan. Whisk together the lemon juice, egg yolks, salt and pepper until completely smooth.

Put the egg yolks in a bowl over a pan of boiling water.

Pour the melted Pure spread, in a steady stream, over the egg yolk mix and beat with a wooden spoon to make a smooth, creamy sauce. Add lemon juice to taste.

Mackerel:

Pan fry the mackerel in a hot pan with the melted Pure spread for 2 minutes each side, until warmed through.

Serve:

Serve with a poached egg on top of the mackerel and pour over the hollandaise. Sprinkle with parsley.

If necessary, re-hydrate the hollandaise with some warm water.

Tips: To brown the hollandaise, place the dish under a hot grill for 1 minute.
